Make your own Caesar Salad – classic recipe with croutons & Parmesan
Caesar salad is a true classic among salad dishes – crispy croutons, crunchy romaine lettuce, robust Parmesan, and a spicy dressing with a subtle hint of garlic make it so special. This recipe stays true to the original, is easy to prepare, and is perfect as a starter or light main course. Ideal for anyone who loves salad but doesn't want to miss out on flavor.

Ingredients for portions
6 tbsp olive oil, + oil for frying
1 large garlic clove, peeled
1 large free-range egg
1 tbsp lemon juice
2 tsp Worcestershire sauce
Black pepper, freshly ground
1 romaine lettuce, leaves separated and left whole
2 thick slices of white bread, crust removed and cut into cubes
25 g Parmesan cheese, coarsely grated
How to prepare
Pour the oil into a saucepan, add the garlic, and heat gently over low heat. To avoid frying the garlic, heat the oil to approximately body temperature. Remove the pan from the heat and let it stand for about 30 minutes.
Place the egg in a pot of cold water and bring to a boil. Boil for 1 minute, then refresh the egg in cold water. Crack the egg into a mixing bowl and mix thoroughly with the garlic, lemon juice, Worcestershire sauce, and olive oil. Season to taste with pepper.
Fry the bread cubes in a little olive oil until golden brown and crispy, then drain the finished croutons on kitchen paper.
Arrange the lettuce leaves in a bowl. Drizzle with the dressing and sprinkle with the croutons and Parmesan cheese. To serve, coat the leaves with the dressing and arrange them in a circle, tip-out. Place the salad platter on the table, and everyone can help themselves and eat with their fingers.
